  • I have tried several Instant Pot cookbooks and I have found this one to have the most full-proof recipes. In the first pages the author, Rachel Collins, tells you how to use your Instant Pot, whether using the pre-programmed or manual settings. She also has a section on how to convert recipes for the Instant Pot. This book is extremely thorough and has recipes for the pantry which I find very useful. For example, did you know that you can make yogurt with your IP? I never knew that! There are recipes for mayo, broths, applesauce, caramelized onions.

    There are separate chapters for breakfast, beans and grains, soups and chilis, poultry, beef and pork, vegetables and side dishes, pantry, and desserts. There’s also a really good recipe for Honey Tumeric Tonic which is great if you have the cold or the flu. I like how this book has very nutritious and healthy recipes along with several different ethnic foods such as borracho beans, Korean braised beef short ribs, Jamaican-style Rice and beans, Chana Masala, and Indian Inspired Okra and Cauliflower with Cucumber Yogurt Sauce.
    This is my “go to” Instant Pot cookbook for sure! I have really enjoyed making several of these recipes. The recipes are easy to follow and the author details everything you need to know for your IP for each recipe.

    So while I’m relatively new at using my IP, I have found her recipes easy to follow and understand. Tonight I’m going to make the chicken and dumplings soup! I highly recommend this book and give it 5 stars! There are recipes sure to please every appetite in this book, from down-south comfort food recipes to unique ethnic ones!   • I was gifted an instant pot for my birthday immediately started looking for a cookbook to help me use it. I sat in Barnes and Noble for over an hour, looking through various pressure cooker and Instapot cookbooks (my pressure cooker is Farberware if that matters). Reading through the recipes I felt disappointed at the lack of family friendly dishes that would please kids and adults that didn’t require a ton of specialty ingredients. I want food with flavor but I also need bang for my buck - much as I would like to we can’t afford to live on Korean barbecue short ribs or cassoulet with duck confit. Which brings me to This Amazing instapot Cookbook by Rachel Collins, a cookbook that has exactly what I was looking for but only found bits and pieces of elsewhere. I didn’t know Ms. Collins had a blog until after I bought the book because I never bothered to read the back cover - to me the recipes tell the tale and that’s what I looked at first.

    There is also a great introduction on how to use your instapot pressure cooker which was very useful to me as a newbie. So far I have made the Hearty Beef and Barley Soup (there are 100+ different soup/stew/chowder recipes in the book) which was wonderful. We have also eaten Bean with Bacon soup, Thai Chicken Thighs, Smokey Baked Beans, Shredded Barbecue Chicken and the Italian Sausage and Spinach Risotto and they have all gotten rave reviews!!!

    This cookbook is organized into logical chapters that are easy to follow and an index that organizes food under type so if you want to find all the recipes with pork, chocolate or potato just look under those headings. There are a wide variety of dishes with a lot of flavor that won’t break the bank or your sanity because the instructions are very thorough. I love this cookbook, it’s exactly what I needed and I highly recommend it to anyone looking for a pressure cooker cookbook for flavorful dishes you can make for everyday meals.
  • So. My sister got an instant pot for xmas. We played with it on xmas day with various things. We had ZERO knowledge and did not read the book that came with it. I'm a pretty darn good cook, traditionally, but this instant pot thing was out of my expertise. After playing with it for a week I thought it was one of those "fads" but thought that it had some merits. I decided to NOT write it off and do some research. I ran up on this book and purchased it. I spent a couple of days reviewing it and two days later I had my own Insta Pot.

    The thing about this book is that she provided tables on the different types of meats/veggies/seafood you can cook with basic directions. This gave me IDEAS on what I could do with it. Bacon? Really? I'm all in now!
    During the two days that I waited for my Instapot I reviewed the entire book and made notes on the first things I wanted to try. I am simply amazed.

    If you are a NON-cook - this book is easy to follow and your food will turn out fabulous if you follow the directions. If you have just a few skills (or more) you can follow the basic methods and pretty much follow your own recipes to achieve greatness. I'm not kidding. I'm still shocked.
    Further, my partner can barely boil water - yup - he can burn a boiled egg and he has ZERO interest in cooking and that has not changed during the 20yrs we've been married. This machine ONLY USING THIS BOOK has gotten him interested.

    I think, if you are considering buying an instant pot, you MUST have this book. The author gives you so much basic information (including a table comparing various instant pot) and ton of excellent recipes... you cannot go wrong.
